From the Buddhist tradition, the first teaching Buddha delivered after his awakening was about following the Noble Eightfold Path, the Middle Way which steers clears from the extremes. This beer contemplates this philosophy by offering a balanced Witbier, where the path to Nirvana is achievable by enjoying its beautiful colour, absorbing the delicate wheat and Belgian yeast aromas and finally, satisfying the senses, sip after sip, with the serenity only offered by the enlightenment. Not necessarily biter our sweet, nor sour or fruity, just pure summer bliss!
This Belgian Witbier, a light and refreshing drink, carries this style pedigree mixing pilsner and wheat malts to create a traditional “Blanche¨. Our subtle twist was to replace the usual orange peel and coriander seeds with lime zest and lemon grass. Although, not a hoppy beer, a combination of Magnum and Cascade hops were selected to slyly contribute with the spicy profile where the potential bitterness gives space for the natural wheat acidity to emerge. An authentic wheat yeast was chosen, and understanding the differentiation of aromas in between a wit and a weiss (clove/banana), the selected fermentation temperature was in the middle of the way (pun intended) to stay away from the extremes and offer the best of both flavours with a zing of the lemon-lime combo freshness.
